How can I see my processing fees for charging credit cards and ACH payments?

You can see exactly what your processing fees where by going to the reports page>bank account deposits. Here you can see a list of bank account deposits made into your bank account from processing payments. If you click on the date of the deposit it will take you to a page where you can see exactly the amount charged to the owner and then the processing fees associated with that payment.
